| dc.description.abstract | En este trabajo, se evaluó el efecto de la temperatura, la relación soluto:solvente y la relación etanol:agua, sobre la extracción sólido-líquido de los componentes polifenólicos presentes en la almendra de mango (Var. Magdalena River). Para tal fin se empleó un diseño factorial 23 compuesto central rotable + puntos centrales con replica. Además se ajustaron los parámetros cinéticos del proceso, probando cuatro modelos ampliamente utilizados en la literatura para describir este tipo de fenómeno. En todos los casos se midió el contenido de polifenoles empleando el reactivo de Folin-Ciocalteu a 760nm. Los resultados experimentales fueron ajustados a un modelo de segundo orden con un R2 ajustado del 99,19% y mostraron que todas las variables estudiadas tienen un efecto significativo sobre la concentración de polifenoles totales (PT). El mayor rendimiento de extracción (144,52 mg de equivalentes de ácido gálico/g de harina de la almendra de mango seca) se alcanzó bajo las siguientes condiciones: temperatura 67°C; relación etanol:agua 57,6:43,4 (v:v) y relación soluto:solvente 1:5 (m:v). A estas condiciones se realizó el estudio cinético para finalmente comparar los modelos resultando que el modelo que proporcionó el mejor ajuste fue el de Peleg Modificado con un R2 de 0,98 observándose que el tiempo necesario para alcanzar el equilibrio es de 94 min y a partir de los parámetros cinéticos ajustados se infiere que la extracción de polifenoles a partir de la almendra de mango es un proceso rápido cuando se le compara con estudios hechos empleando otros tipos de residuos agroindustriales. | |

For this purpose, a rotatable central composite design factorial 23 whit four replicates at the centre point was then applied. Also the kinetic parameters were adjusted in the process, testing four models widely used in the literature to describe this phenomenon. In all cases, the polyphenols content was measured using Folin-Ciocalteu to 760nm. The experimental results were fitted a second order polynomial model whit an R2 adjusted of 99.19% and the results showed that all the variables studied have a significant effect on the concentration of total polyphenols (TP). The highest yield (144,52 mg gallic acid equivalents/g flour dry mango kernel) were reached under the following conditions: temperature 67oC, ethanol:water ratio 57,6:43,4 (v:v) and soluto:solvente ratio 1:5 (m:v). In these conditions the kinetic study was conducted to finally compare the models and was found that the best fit was Peleg Modified with an R2 of 0.98 was observed that the time required to reach equilibrium is 94 min and from the fitted kinetic parameters the extraction of polyphenols from kernel of mango is a process faster than other agro-industrial waste. | |
