| dc.description.abstract | Las ciclodextrinas (CDs) son macromoléculas solubles en agua utilizadas en la industria alimentaria, agrícola, ambiental, textil, farmaceútica y cosmética. CDs tienen una estructura cóncava con cavidad no polar y corteza exterior polar que le confiere propiedades de encapsulación. La cáscara del cacao y el mucílago corresponde al 92% de la masa del fruto del cacao y éstos son desechados durante la producción de cacao. El mucílago contiene principalmente agua, sacarosa, glucosa y fructosa, pero también contiene oligosacáridos lineales y ramificados similares a los del almidón. Con el fin de aprovechar este residuo agrícola, el mucílago de cacao fue estudiado como sustrato para la producción de ciclodextrinas mediante la acción de la enzima ciclodextrin glicosiltransferasa (CGTase Amano, Japón). Para la producción de CDs a partir de almidón se determinó que las condiciones óptimas son pH de 8,0, tiempo de reacción de 120 min, temperatura de incubación 55 C, concentración de almidón 0,025 g/mL y 138,6 U/g. Al cambiar de sustrato por mucílago las condiciones óptimas determinadas fueron pH 6,0, tiempo de reacción 60 min, temperatura de incubación 55 C, 1,0 g/mL de concentración de mucílago y 3000 U/g de CGTasa. Las CDs fueron obtenidas en bajas concentraciones y su formación ocurrió por la acción de la CGTasa en los oligosacáridos presentes en el mucílago de cacao. | |

They have a concave structure with a non polar cavity and a polar exterior that confers their encapsulation properties. Cocoa shells and mucilage correspond to 92% by mass of the cocoa fruit and those components are lost during cocoa production. Mucilage contains mainly water, saccharose, glucose and fructose but also contains linear and branched oligosaccharides analogs to starch. In order to take advantage of this agricultural waste; cocoa mucilage was studied as substrate for the production of cyclodextrins by the action of the cyclodextrin glucosyl transferase (CGTase Amano, Japan).For the production of CDs from starch it was determined that the optimal conditions are pH 8.0, reaction time 120 min, incubation temperature 55 C, concentration On of starch 0.025 g / mL and 138.6 U / g.
