dc.description.abstract | El aceite de Sacha Inchi (Plukenetia volublis Linneo) es reconocido por su alto contenido de omegas 3, 6 y 9; sin embargo, la presencia de estos lo hace propenso al deterioro oxidativo debido a la formación de productos de oxidación (aldehídos y cetonas) indeseables y perjudiciales, lo que provoca una disminución de la vida anaquel del mismo. Para evaluar el efecto de la adición de antioxidantes de origen natural y sintético en el aceite se siguieron las siguientes etapas: en primera instancia, se evaluó si existían diferencias significativas, desde el punto de vista fisicoquímico, de aceites de Sacha Inchi provenientes de diferentes regiones de Santander. Los resultados mostraron, con un nivel de significancia del 5%, que existían diferencias significativas entre las características fisicoquímicas y la procedencia de las cuatro muestras de aceites analizadas. Por lo tanto, el aceite seleccionado fue el aceite El Playón el cual cumplió con más criterios de la NTP 150.400. Seguidamente se evaluó la capacidad antioxidante del aceite sin y con la adición de 200 mg/kg de BHT y extracto polifenólico de grano de cacao. Los resultados mostraron que el aceite posee una capacidad protectora debido a antioxidantes naturales presentes, y que al añadirle el antioxidante sintético y natural aumenta en un 9,042±0,01 y 59,774±0,01 su porcentaje de inhibición, respectivamente. Por último, se realizó un estudio cinético con el fin de determinar los parámetros propios que permitieran estimar la vida útil del aceite bajo diferentes condiciones de temperatura. Los resultados muestran que el aceite suplementado con antioxidante sintético BHT le aporta mayor estabilidad oxidativa, obteniendo un tiempo de vida útil de 52 días a 25°C. | |
dc.description.abstractenglish | Sacha Inchi Oil (Plukenetia volublis Linnaeus) is well known for its high content of omega 3, 6 and 9; however, the presence of these makes it prone to oxidative deterioration due to the formation of oxidation products (aldehydes and ketones) undesirable and harmful, which (refers to the products) cause a decrease in the shelf life of the same. To evaluate the effect of the addition of antioxidants of natural and synthetic origin in the oil the next steps were followed: in the first instance, it was assessed whether there were significant differences from the physicochemical point of view, of Sacha Inchi oils from different regions of Santander. The results showed, with a significance level of 5% that there were significant differences between the physicochemical characteristics and the origin of the four oil samples which were analyzed. Therefore, the selected oil was the one from El Playón which met more criteria NTP 150.400. Then the antioxidant capacity of the oil was evaluated with and without addition of 200 mg / kg of BHT and polyphenolic extract of cacao bean. The results showed that the oil has a protective capacity due to natural antioxidants present, and when the the synthetic and natural antioxidant are added, its inhibition percentage increases by 9.042 ± 0.01 and 59.774 ± 0.01, respectively. Lastly, a kinetic study was performed in order to determine the proper parameters that allow estimating the useful life of the oil under various temperature conditions. Results show that the oil supplemented with synthetic antioxidant BHT provides greater oxidative stability, obtaining a lifetime of 52 days at 25 ° C. | |
