dc.description.abstractenglish | Currently in the coffee sector around 784.000 tons/year of residual biomass are generated, 44% of which is coffee pulp (residue). The objective is to give an added value to this residue, which in this case is to obtain pulverized products with methylxanthine content. In the present work, the processing stages of methylxanthine extracts from coffee pulp were evaluated. In the first stage, the extraction was carried out with the coffee pulp fines, after which the extracts were filtered in a filter press with different types of cloth and the resistance to the filter medium of the chosen cloth was presented. As a product of this stage, extracts with a caffeine concentration of 12,51 [mg/gMS] and 0,33 [mg/mL] were obtained. The second stage was clarification by ultrafiltration where reductions of at least 82% in absorbance and 98% in turbidity were obtained. During the concentration of the extracts, a volumetric concentration factor of approximately 5,45 was reached. Subsequently, the extracts were again clarified, where the reduction in absorbance was at least 11%. At the end of this second stage, extract concentrations of 2,01 [mg/mL] and content of 16,5 [mg/gMS] were obtained. In the final stage, pulverized products with high-quality standards and methylxanthine concentrations were obtained at 7,28 [mg/gMS].
