SíntesisEl estatus cultural de la leche en Antioquia se caracteriza desde la antropología de la alimentación, según la cual ésta es parte indisoluble de la identidad. Se rastrea la constitución histórica de la dieta antioqueña, preguntándose por el acceso a la leche como artículo alimentario de la población partícipe del proceso de conformación del Medellín industrial a principios del siglo XX. Se ilustran las transformaciones en la producción, distribución y consumo durante este siglo, buscando conjugar en el análisis los componentes socioculturales y económicos que modelan el consumo lácteo.

The historical composition of the antioqueño dietary pattern is addressed, raising the question of access to milk intake among the population who were part of the industrialization process of Medellin, early in the XX century. Changes in milk production, delivering and intake are described for the present century, trying to articulate the sociocultural and economic factors that shape milk intake.
