dc.description.abstractLa presente monografía de grado consta de una propuesta que tiene como objeto construir o restaurar la infraestructura del beneficio de poscosecha del grano de cacao en pequeñas fincas de agricultores para obtener un producto final de óptima calidad teniendo como referencia el municipio de Bucarasica en el departamento de Norte de Santander, cumpliendo con características fisicoquímicas y sensoriales deseables facilitando su venta a mercados nacionales e internacionales, a través de una capacidad técnica adecuada (cajón fermentador y marquesina solar), ya que los agricultores de cacao poseen un conocimiento empírico erróneo sobre la poscosecha del grano y no cuenta en sus fincas con la infraestructura adecuada para realizarla, lo que se refleja en un producto que no cumple con los estándares establecidos en el mercado y se ve reflejado en su valor de venta. Al realizar un eficiente proceso de poscosecha (fermentación y secado del grano de cacao), los agricultores seleccionados con estas unidades de beneficio, se les ofrecerá capacitaciones y asesorías técnicas para obtener un grano óptimo de cacao de buen sabor y aroma, que cumpla con los estándares de calidad de los mercados nacionales e internacionales, cambiando las costumbres tradicionales por un método que promueva el mejoramiento del proceso, favoreciendo al incremento de sus ingresos económicos partiendo de obtener un excelente precio en el mercado para la venta del grano, la posibilidad de exportar y por ende un mejoramiento en la calidad de vida de su grupo familiar. Se realizará una valoración de las condiciones técnicas para desarrollar el proceso del beneficio en las fincas de los agricultores seleccionados, estableciendo un plan de mejoramiento que permita optimizarlo, y que conlleve al establecimiento de la capacidad técnica necesaria para el beneficio en el grano de cacao, y posteriormente realizar su evaluación financiera.
