dc.description.abstract | El presente trabajo demuestra los resultados obtenidos en la caracterización bromatológica y análisis ANOVA y Tukey entre los lotes extraídos del lixiviado de guanábana proveniente de su fruta de rechazo tanto estéril como sin esterilizar. Se encontraron valores de humedad entre 87,15 y 88,01%, ceniza de 0,51 y 0,47%, grasa 0,012 y 0,13%, proteína 0,81 y 0,77%, acidez 1,05 y 1,04 g ácido cítrico/100 g, carbohidratos 11,68 y 10,70% calorías 46,61 y 45,85 kcal/100g, pH 3,73 y 3,71, °Brix 13,20 y 12,17, índice de madurez 12,44 y 11,69, y de un contenido bajo de fibra dietaria soluble e insoluble; respectivamente. Además de un contenido de azúcares fermentables de 115,89 g/L para el lixiviado estéril y 114,70 g/L para el lixiviado sin esterilizar. Por otro lado, se evaluó en un proceso de fermentación el efecto de la concentración del lixiviado de guanábana como fuente de carbono con valores de 45, 65 y 85 g/L en cuatro tipos de levaduras 195, 110 SBA, 246 y 218 para la producción de etanol con el objetivo de obtener un máximo rendimiento Yps; encontrando que la levadura 195 a una concentración de 85 g/L dio un rendimiento de 0,21 g/g. Del mismo modo se estudió la relación C:N sobre la producción de etanol respecto a la levadura 195 y concentración inicial de 85 g/L, variando entre 5:1, 15:1 y 25:1, entre tres fuentes de nitrógeno, Extracto de levadura, Sulfato de amonio y Peptona, resultando que el extracto de levadura a una relación de 5:1 dio un mayor rendimiento de 0,33 g/g. | |
dc.description.abstractenglish | The present investigation shows the results obtained in the bromatological characterization and ANOVA analysis of soursop juice from both sterile and unsterilized juice fruit. Moisture values were found between 87.15 and 88.01%, ash 0.51 and 0.47%, fat 0.012 and 0.13%, protein 0.81 and 0.77%, acidity 1.05 and 1.04 g citric acid/100 g, carbohydrates 11, 68 and 10.70% calories 46.61 and 45.85 kcal/100g, pH 3.73 and 3.71, °Brix 13.20 and 12.17, maturity index 12.44 and 11.69, and low soluble and insoluble fiber content; respectively. In addition to fermentable sugar content of 115.89 g/L for the sterile soursop juice and 114.70 for the unsterilized soursop juice. On the other hand, the effect of the concentration of soursop juice as the main substrate was evaluated in a fermentation process with values of 45, 65 and 85 g/L in four types of yeasts 195, 110 SBA, 246, and 218 for the production of ethanol with the objective of obtaining a maximum yield. The best was the yeast 195 at a concentration of 85 g/L which gave a yield of 0.21 g/g.
