dc.description.abstract | Las aflatoxinas son micotoxinas presentes en el maíz (Zea may L), son producidas por diferentes especies fúngicas del género Aspergillus, comunes y dispersos en la naturaleza, sobre todo en zonas de clima cálido y húmedo. Estudios previos muestran que la exposición a estas representa un riesgo para la salud humana y animal, por lo que es importante llevar un control de sus concentraciones y realizar procesos que propendan la mitigación de éstas. La nixtamalización es el tratamiento tradicional que se hace al maíz usado en la producción de arepas, tortillas o tamales. En el presente trabajo se verificó un método analítico para la detección y cuantificación de aflatoxinas (B1, B2, G1 y G2) en el maíz mediante el uso de HPLC-FD, evaluando diferentes parámetros como selectividad, linealidad (>0,995), límites de detección (<0,5ng/mL) y cuantificación (<1,5ng/mLde recuperación entre 75-110%. Además, se realizó la nixtamalización a escala de laboratorio a los granos de maíz, obteniendo una reducción en la concentración de las aflatoxinas B1, G1 y totales de 70 a 97% en las diferentes muestras. Adicionalmente, a las muestras nixtamalizadas se le aplicó una simulación del proceso de digestión gastro-intestinal in vitro, donde se obtuvieron valores de bioaccesibilidad entre 7-41% y un porcentaje de recuperación <23,22% de la concentración de aflatoxinas totales. El cambio en el pH presente en la nixtamalización y digestión gastro-intestinal influyó significativamente en la concentración de aflatoxinas en el maíz. | |
dc.description.abstractenglish | Aflatoxins are mycotoxins which are presented in corn (Zea may L). They are produced by different fungal species of the genus Aspergillus, highly common and dispersed in nature, especially in hot and humid climate zones. Previous studies have shown that the exposure to these represent a risk to human and animal health, therefore is important to monitor their concentrations and carry out processes that promote their mitigation. Nixtamalization is the traditional treatment of corn that will be used to make arepas, tortillas or tamales. This study shows an analytical method for the detection and quantification of aflatoxins (B1, B2, G1 and G2) in corn. It was verified by HPLC-FD, evaluating different parameters such as selectivity, linearity (> 0,995), detection limits (<0,5ng/mL) and quantification (<1,5ng/mL%) and accuracy represented with recovery percentages between 75-110%. In addition, the corn grains were nixtamalized on a laboratory scale, obtaining a reduction in the concentration of B1, G1 and total aflatoxins from 70 to 97% in the different samples. Additionally, a simulation of the in vitro gastro-intestinal digestion process was applied to the nixtamalized samples, where bioaccessibility values between 7-41% and a recovery percentage <23,22% of the total aflatoxin concentration were obtained.
