dc.description.abstract	El presente documento es el plan de negocios para una pastelería saludable ubicada en la ciudad de Bucaramanga, este plan incluye el análisis de oportunidad, estudio de mercados, técnico, legal y financiero. Alimentación saludable es aquella que incluye una diversidad suficiente de alimentos en las cantidades adecuadas, en función de las características de cada persona (edad y situación fisiológica -infancia, estirón puberal, embarazo y lactancia-, sexo, composición corporal y complexión) y de su estilo de vida (activo/sedentario), y que garantiza que se cubren los requerimientos de energía y nutrientes que el organismo necesita para mantener un buen estado nutritivo, de salud y bienestar. Por otro lado, en muchos países en especial latinoamericanos las panaderías y pastelerías hacen parte de la vida diaria, existe una en cada esquina y son un sitio de encuentro, pero también un punto esencial para abastecerse para el desayuno, cenas y refrigerios; integrar ambos conceptos y desarrollar una pastelería saludable se vislumbra como una excelente opción. En Colombia ya se han hecho algunos acercamientos a la pastelería saludable con algunas recetas ricas y que se encuentran en mercadconsolidado un concepto de cara al consumidor final a través de estos productos, de ahí que la oportunidad se encuentre en un espacio donde las personas puedan vivir una experiencia diferente a través de productos de pastelería que no sólo tengan bajas calorías sino también ingredientes que en verdad los alimenten, consolidar una marca en el colectivo de Bucaramanga y su área metropolitana será un excelente inicio para expandirse nacionalmente y contribuir a mejorar la calidad de vida de la población y a la vez generar empresa.
dc.description.abstractenglish	This document is the business plan for a healthy bakery located in the city of Bucaramanga, this plan includes opportunity analysis and market, technical, legal and financial research. Healthy food is one that includes a sufficient diversity of foods in the appropriate quantities, depending on the characteristics of each person (age and physiological situation - influenza, pubertal spurt, pregnancy and lactation, sex, body composition and complexion) and its Lifestyle (active / sedentary), and ensures that the energy and nutrient requirements that the body needs to maintain a good nutritional, health and well-being are covered. On the other hand, in many Latin American countries, bakeries and bakeries are part of daily life, there is one in every corner and they are a meeting place but also an essential point to stock up for breakfast, dinners and refreshments; Integrating both concepts and developing a healthy pastry is seen as an excellent option. In Colombia some approaches to healthy pastry have already been made with some rich recipes that are found in specialized "fit" markets, however, no one has consolidated a concept for the final consumer through these products, hence The opportunity is in a space where people can live a different experience through pastry products that not only have low calories but also ingredients that truly feed them, consolidate a brand in the Bucaramanga collective and its metropolitan area will be a Excellent start to expand nationally and contribute to improve the quality of life of the population while generating business.
