| dc.description.abstract | La producción de frío, que garantiza una temperatura adecuada para la conservación deproductos, tiene un costo económico, y este es superior si la temperatura de la conservacióndel producto es baja. La obtención de la temperatura adecuada, junto a otras condicionesimportantes como son la humedad y composición gaseosa del ambiente son determinantesen el caso de productos perecederos, es por ello que la industria frigorífica ha alcanzado ungran desarrollo y aplicación en el sector agro alimenticio. Las cámaras frigoríficas sonequipos e instalaciones destinados especificamente al enfriamiento, congelación yconservación de productos perecederos; dependiendo de su disposición pueden ser de usomonocámara (cuartos fríos) o de uso multicámara (frigorífico). La elaboración de este trabajo tiene como finalidad contribuir a la formación integral de losestudiantes de Ingeniería Mecánica de la Universidad Industrial de Santander brindándoleuna herramienta de fácil acceso, de la información en lo que se refiere al diseño, montaje yel mantenimiento de cámaras frigoríficas; así como las especificaciones generales de losconceptos de la refrigeración de productos alimenticios. Para la elaboración de estesoftware se utilizó como herramienta de soporte los programas Dreamweaver, Fireworks yFlash de la línea Macromedia, y como ayuda para la edición y mejoramiento de las imágenesy videos se utilizó los programas Photoshop, Corel, Solid Edge, Paint, etc. Que permitieronlas estructuración de la información en siete módulos en los cuales el estudiante puedeencontrar: generalidades, conceptos básicos, tipo de cámaras, componentes, conservaciónde alimentos, diseño y montaje, mantenimiento. Con la elaboración de esta herramienta computacional (MECAFRI), se logra dotar a laEscuela de Ingeniería Mecánica y a los estudiantes en general de la Universidad Industrialde Santander una información completa sobre cámaras frigoríficas. | |
| dc.description.abstractenglish | The cold production that assure a suitable temperature for the products conservation has an economic cost, this is higher it the temperature obtention and some other important conditions such as the moisture and gaseous composition of the environment are determining in the case of perishable products, that is the reason why the refrigerator industry has reached a big development and application in the farming Πnourishing sector. The refrigerator cameras area equipments and installations destinated to the freezing and conservation of perishable products, these ones depending on their disposition could be monocamera (cold room) use or multicamera (refrigerator). The aim of this work is the contribution to the integral formation of the Universidad Industrial de Santander Engineer Students, offering and easy tool for consulting and for getting information about the desing, assembly and cold Πstorage cameras maintenance, they can find information about general specification and refrigeration concepts of the nourishing products too. For the elaboration of this software it was rewired the Dream weaver program, firework and micromedio line flash, for the edition, images improvements and videos, the Photoshop, Corel, solid edge, paint program's were used too. These one allowed, the structuration of the information in seven modules, where the students can find: generalities, basic concepts, types of cameras, components, food conservation, desing and assembly, maintenance. With the elaboration of this computer tool (MECAFRI) it was possible to give to the mechanic engineer carreer and to the general students of the university a complete information about refrigerator cameras. | |
