DESCRIPCIÓN DEL CONTENIDO: Los embutidos son aquellos derivados, preparados a partir de las carnes autorizadas, picadas o no, sometidas o no a procesos de curación, adicionadas o no de despojos comestibles y grasas de cerdo, productos vegetales, condimentos y especias, e introducidos en tripas naturales o artificiales, la cual se brindaran a las personas de los estratos 1, 2 y 3 de una manera fácil y rápida de preparar sus alimentos; se mejorará la alimentación de los consumidores con un producto que tiene un alto valor nutricional con un precio asequible dando confianza a los consumidores en su preparación; se aumentará el empleo y fortalecimiento en el sector avícola en la ciudad de Valledupar Cesar, cumpliendo con la aplicación de las normas sanitarias y de manipulación de alimentos necesarias para su preparación y comercialización permitiendo que las personas criadoras vendan las materias primas necesarias para la elaboración del productos. Con este estudio de factibilidad se quiere estudiar la idea, para llevar a cabo la realización de emprender y optimizar todos los tiempos y equipos necesarios, definir si se van a obtener ganancias o pérdidas y con ella conocer todos los estudios de mercado, técnico, administrativos, financieros y evaluación; con el fin de crear una empresa productora de embutidos artesanales a base de mollejas de pollo en la ciudad de Valledupar, Cesar. El producto para preparar en esta idea de negocio es a base de mollejas de pollo, las cuales, cuentan con un alto valor nutritivo por contener vitaminas, proteínas y los aminoácidos esenciales para la nutrición del cuerpo humano; producto que sustituye a las demás carnes como la res, cerdo, pescado y entre otras; además no se tiene en el mercado una empresa que prepare embutidos con esta materia prima. Los salchichones de mollejas de pollo pesaran 900 gramos, midiendo 60 cm de largo y su forma es cilíndrica. Identificando el salchichón con un color marrón con tonalidades rojizas. Con respecto al contenido proteico se ha comprobado que las mollejas de pollo equivalente a 145 gramos pueden aportar hasta un 61% de proteínas, además contienen vitaminas y minerales que aportan nutrientes al cuerpo humano. Las autoras del proyecto han venido trabajando en la producción y desarrollo del producto, logrando los primeros productos en el mercado. También aportarán todos sus conocimientos teóricos y prácticos aprendidos en la carrera, sin olvidar que generarán sus propios empleos y para las personas de la región Si se crea la empresa; el sector empresarial y comercial, contaría con una empresa eficiente, eficaz, responsable y con una excelente calidad de los procesos de elaboración y comercialización, un buen manejo ambiental y un control sanitario, promoviendo el desarrollo en la ciudad de Valledupar, Cesar.
