| dc.description.abstract | El proyecto tuvo como objetivo implementar un cultivo de orellanas (Pleurotus ostreatus) en el corregimiento de Santa Cruz de la Colina, municipio de Matanza – Santander, para su transformación en carne vegetariana tipo hamburguesas, integrando prácticas de sostenibilidad, aprovechamiento de residuos agrícolas y principios de economía circular. La investigación buscó generar una alternativa alimentaria saludable, inocua y viable para la comunidad, contribuyendo al fortalecimiento de la producción local y a la diversificación económica rural. Se estableció un cultivo de Pleurotus ostreatus utilizando como sustrato bagazo de caña (90%), salvado de trigo (10%) y cal (3%). Se mantuvieron parámetros controlados de temperatura (22–28 °C en incubación y 15–22 °C en fructificación), humedad relativa (70–80% y 85–95%, respectivamente) y ventilación adecuada. La colonización del sustrato se logró en un periodo promedio de 20 días, y la etapa de fructificación se alcanzó entre 4 y 7 días sin presencia de contaminantes, demostrando que el manejo técnico y agronómico fue adecuado para la producción del hongo. Se desarrollaron cinco formulaciones experimentales de carne vegetariana, variando el porcentaje de inclusión de orellanas entre 33,6% y 69,5%. También, el análisis sensorial preliminar determinó que el ensayo #5 fue la formulación óptima, debido a su textura firme y jugosa, sabor umami, color homogéneo y olor similar a la carne tradicional. Desde el punto de vista nutricional, esta formulación presentó 155 kcal por porción, 4,4 g de proteína y un bajo contenido graso, posicionándose como una alternativa saludable y con buen aporte vegetal. Además, se realizó un análisis microbiológico en el laboratorio LABALIME S.A.S., cuyos resultados mostraron ausencia de patógenos como Salmonella spp, Escherichia coli, Listeria monocytogenes y Clostridium perfringens, cumpliendo con los límites establecidos en la normativa sanitaria vigente. Esto confirmó la inocuidad del producto y la adecuada implementación de las Buenas Prácticas de Manufactura durante el proceso. Finalmente, se aplicó una prueba hedónica a 30 participantes, evaluando olor, sabor, textura y color. El producto obtuvo un nivel de aceptación general superior al 75%, siendo el sabor y la textura los atributos mejor valorados, lo que evidencia su potencial de aceptación en el mercado local. | |
| dc.description.abstractenglish | : The project aimed to implement oyster mushroom (Pleurotus ostreatus) cultivation in the village of Santa Cruz de la Colina, municipality of Matanza, Santander, for processing into vegetarian burgers, integrating sustainable practices, the use of agricultural waste, and circular economy principles. The research sought to generate a healthy, safe, and viable food alternative for the community, contributing to strengthening local production and rural economic diversification. A Pleurotus ostreatus culture was established using sugarcane bagasse (90%), wheat bran (10%), and lime (3%) as substrate. Controlled parameters were maintained, including temperature (22–28 °C during incubation and 15–22 °C during fruiting), relative humidity (70–80% and 85–95%, respectively), and adequate ventilation. Substrate colonization was achieved in an average of 20 days, and the fruiting stage was reached between 4 and 7 days without the presence of contaminants, demonstrating that the technical and agronomic management was adequate for mushroom production. Five experimental vegetarian meat formulations were developed, varying the oyster mushroom inclusion percentage between 33.6% and 69.5%. Furthermore, the preliminary sensory analysis determined that trial #5 was the optimal formulation, due to its firm and juicy texture, umami flavor, homogeneous color, and aroma similar to traditional meat. From a nutritional standpoint, this formulation presented 155 kcal per serving, 4.4 g of protein, and a low fat content, positioning itself as a healthy alternative with a good plant-based contribution. Furthermore, a microbiological analysis was performed at the LABALIME S.A.S. laboratory, the results of which showed the absence of pathogens such as Salmonella spp., Escherichia coli, Listeria monocytogenes, and Clostridium perfringens, complying with the limits established by current health regulations. This confirmed the product's safety and the proper implementation of Good Manufacturing Practices during the process. Finally, a hedonic test was administered to 30 participants, evaluating odor, flavor, texture, and color.
