dc.description.abstractConsiderando la situación actual por la que atraviesan las plantas de sacrificio de ganado en Colombia con el consiguiente cierre de algunas de ellas debido a las condiciones higiénico sanitarias en las que se encuentran operando, el presente trabajo comprende el diagnóstico de la situación sanitaria y ambiental de la planta de sacrificio de ganado del municipio de Utica, Cundinamarca, el cual fue realizado aplicando la matriz diseñada por el INVIMA para verificar los aspectos contenidos en el decreto 2278 de 1982. Para elaborar este diagnóstico se procedió a efectuar una visita a las instalaciones de la planta de sacrificio en mención, durante la cual se encontró que en ella no se llevan a cabo actividades que atenten contra la inocuidad del producto que allí se obtiene, no se provocan grandes impactos al ambiente teniendo en cuenta que en ella no se tratan los subproductos derivados del proceso de sacrificio, todo ello, gracias a la gestión de las autoridades ambiental y de salubridad que en su momento actuaron para garantizar a la población de consumo, la calidad del establecimiento, garantizando los aspectos ambientales. Sin embargo se efectuaron algunas recomendaciones para la implementación de prácticas para el uso eficiente y ahorro del agua. Además, este ahorro y uso eficiente del agua, son un compromiso de todas las empresas con la autoridad ambiental competente, teniendo un carácter obligatorio
dc.description.abstractenglishConsidering the current situation being experienced by plants slaughtering cattle in Colombia with the subsequent closure of some of them due to hygiene and sanitary conditions in which they are operating, this work involves the diagnosis of health and environmental situation of the cattle slaughter plant in the town of Utica, Cundinamarca, which were performed using the matrix designed by INVIMA to verify statements contained in Decree 2278 of 1982. To make this diagnosis we proceeded to conduct a site visit of the slaughter plant in mention, during which he found that it does not carry out activities that threaten the safety of the product that it is known, not cause large impacts on the environment given that it does not cover products derived from the slaughter process, all thanks to the management of environmental and public health authorities that once acted to ensure the consumer population, the quality of the establishment, ensuring environmental aspects. But some recommendations were made to implement practices for the efficient and water saving, That in one way or another help the cattle slaughter plant, is within the health and environmental standards. Furthermore, these savings and efficient use of water, are a compromise of all firms with the relevant environmental authority, taking a mandatory character
