dc.description.abstractLa presente investigación es una representación histórica sobre el consumo de Aguardientes en Santander y la intervención del gobierno desde la legislación de la lucha antialcohólica hasta los primeros años de funcionamiento de la Empresa Licorera de Santander. Una revisión por las prácticas del consumo de aguardiente en el departamento y la historia fiscal de la renta de licores destilados fueron necesarios para la contextualización temática. La intervención del gobierno tanto en la legislación como en el sector de la fabricación de licores permitió la consolidación del consumo de Aguardiente de caña en el departamento. De este modo, el Aguardiente de caña fue el sustituto de las bebidas fermentadas tradicionales como chicha y guarapo en Santander; a pesar que el sustituto nacional era la cerveza. Para señalar el protagonismo del consumo de aguardiente sobre la cerveza, se analizó los dineros producidos por la renta de licores destilados en los presupuestos departamentales y se recopiló expedientes judiciales de homicidios en el siglo XX en el periodo entre 1923-1953.Tanto en los presupuestos como en la participación circunstancial de los homicidios en el distrito judicial de Bucaramanga, el aguardiente siempre estuvo en primer lugar, durante el periodo analizado. La relevancia de la presente investigación estriba en la ruptura con la tradición historiográfica nacional, en donde se presumía que el sustituto nacional de los licores fermentados era la cerveza, en Santander no ocurrió esta situación, o al menos en la primera mitad del siglo XX el aguardiente de caña fue el sustituto.
dc.description.abstractenglishThis research is a historical representation about Aguardiente consumption in Santander and government intervention since legislation of the fight against alcohol until the early years of operation of the Santander Liquor Company . A review by the practices of consumption of liquor in the department and income tax history of distilled spirits were needed for thematic contextualization. Government intervention in legislation as in the field of manufacture of liquor allowed the consolidation of Aguardiente consumption in the department . Thus, Aguardiente was the substitute for traditional fermented beverages such as chicha and guarapo in Santander , although beer was the domestic substitute . To highlight the prevalence of consumption of Aguardiente over beer, it was analized the money income of distilled spirits in departmental budgets and homicide case files compiled in the twentieth century during the 1923-1953 period. Both budgets and situational involvement in homicides in the judicial district of Bucaramanga, the aguardiente was always first, during the period analyzed. The relevance of this research is to break with the national historiographical tradition, where it was assumed that the national substitute for fermented liquors was the beer, in Santander did not happen this situation, or at least in the first half of the twentieth century cane liquor was the substitute
