dc.description.abstractA nivel nacional se elabora, se comercializa y se consume mayormente el bocadillo de guayaba siendo este el más conocido. El objetivo de esta investigación sobre generación de valor agregado del tomate de árbol con la elaboración del bocadillo en el municipio de Macaravita Santander, es el de evaluar que el tomate de árbol que se produce es apto para la transformación en bocadillo; evaluar la aceptación, formulación y análisis de las características organolépticas y fisicoquímicas del bocadillo de tomate de árbol producido de manera artesanal. Para la captura de esta información se realizó una toma de muestra de PH, grados brix y madurez pruebas micro biológicas, una encuesta realizada de manera física a las personas del municipio de Macaravita para poder determinar entre dos formulaciones que bocadillo prefieren en cuento a aroma, sabor, textura y color.
dc.description.abstractenglishAt the national level, the guava sandwich is elaborated, marketed and consumed, being this the best known. The objective of this research on the generation of added value of the tree tomato with the elaboration of the bocadillo in the municipality of Macaravita Santander, is to evaluate that the tree tomato that is produced is suitable for transformation into a bocadillo; evaluate the acceptance, formulation and analysis of the organoleptic and physicochemical characteristics of the tree tomato sandwich produced in an artisanal way. To capture this information, a sample of PH, brix degrees and maturity microbiological tests was carried out, a survey was carried out physically to the people of the municipality of Macaravita to be able to determine between two formulations which bocadillo they prefer in terms of aroma, flavor , texture and color.
