dc.description.abstract | Antes del siglo XIX, los colorantes utilizados en alimentos eran todos de origen natural, ms tarde aparecieron los colorantes sintticos que sustituyeron los naturales por razones ecmicas. Cuando los colorantes sintticos ya estaban posesionados, se encontrstos producan ccer y alergias, lo que condujo a las entidades encargadas del control de alimentos a suspender el usstos y recomendar el uso de colorantes naturales. Colombia es un pas en el que no se producen colorantes naturales, aún teniendo recursos para hacerlo. La bixina extrada del achiote, es un colorante que tiene ventajas para ser usado en la industria por su nula toxicidad para el consumo humano y para su aplicacila piel. Este trabajo de grado se enfocl estudio tcnico ecmico que hiciera factible el montaje de una planta extractora en el pas y el dis una planta que inicialmente se acondicione a la producciexistente de achiote( se hizo un disBatch), pero proyectada para crecer en el futuro. El estudio estbasado en la economa del proceso, por eso aunque hay posibilidades de procesos ms tcnicos (como el de hacer una extraccicon solventes oricos), ste es el que se acondiciona para obtener una mejor rentabilidad. Se llevcabo un lisis de factibilidad ecmica para la venta del colorante en la industria avcola, para lo cual se realizcomo apoyo un bioensayo con aves de corral. Se encontrs muy rentable el montaje de la planta, ya que el producto tiene una buena aceptaciy con la comercializaciivel nacional no se necesitara la importacil colorante. Se logrisr las etapas integrantes del proceso, plantscala, teniendo en cuenta, que esta planta, puede ser mayor y operada en continuo, cuando la planta tenga una gran demanda de producto. | |
dc.description.abstractenglish | Before the XIX century, the colorings used in foods were all of natural origin, later the synthetic colorings appeared and substituted the natural ones by economical reasons. When the synthetic colorings had already taken possession of the market, was discovered that they produced cancer and allergies, which provoked that the foods control entities stopped the use of them and recommended the use of natural colorings. Colombia is a country where the natural colorings aren't manufactured, in spite of having the resources to make it. The bixin extracted from the annatto tree, is a coloring that has advantages for being used in the industry on account of its null toxicity for the human consumption and for its application in the skin. This pre-graduate project was focused to the economic technical study that makes feasible the assembly of an extracter plant in this country and the design of a plant that initially became conditioned to the production of the existing annatto tree (was chosen a Batch extraction whit alkaline solution), but projected to grow in the future. The study is based in the economy of the process, for that reason although there are possibilities of more technical processes (as extraction with organic solvents), this is the one that becomes conditioned to obtain a better profitability. An analysis of economic feasibility was carried out for the sale of the coloring in the poultry industry, consequently was realized, as support, a bio-experiment with domestic fowls. Was found that is very profitable the assembly of the plant, since the product has a good acceptance and with the commercialization at national level, the import of the coloring would not be necessary. Was possible to design the integral stages of the process, small size plant, but taking into account that this plant, can be more big and operated in continuous, when the plant has a great product demand. | |
