dc.description.abstractenglish | In this research, a kinetically stable emulsion of the mixture of three essential oils (Lippia origanoides-Thymus vulgaris-Rosmarinus officinalis) in water was developed, for this, a Raman Cora 5300 spectrometer was used in the characterization of the oily phase, the method of the hydrophilic-lipophilic balance (HLB) in the determination of the emulsifiers and their respective concentrations, as well as physicochemical analyzes for the determination of the most appropriate stabilizer were also used; as emulsifying materials the Tween 20 - Tween 80 - sunflower oil were evaluated, as stabilizing materials, the carboxymethylcellulose – pectin – maltodextrin, and a Reax Top vortex were used for the preparation of the emulsions. The proportion of essential oils in the oily phase was obtained from studies carried out in different bibliographic sources, it was characterized with the help of the analysis of patterns (metabolites) by Raman, and essential oils by gas chromatography. With the HLB method, the best balance of emulsifying molecules- oily phase and stirring speed was obtained by highlighting the mixture tween 20 – tween 80 - oily phase 1: 1: 2 prepared at 2500 rpm (2 months stable); lastly, the best stabilizer was determined by performing physicochemical tests on the most stable emulsions, where the variation of properties such as pH-viscosity-density-homogeneity-color was observed, and a formulation with greater kinetic stability (> 3 months) was obtained, which was composed of 30% w/w oily phase, 15% w/w tween 20, 15% w/w tween 80, 39.75% w/w water, and 0.25% p/p carboxymethylcellulose prepared at 2500 rpm for 2 minutes. The stirring speed, composition and types of emulsifiers, oily phase composition, and the stabilizer give different properties and characteristics to the system for the formation of stable aggregates, these decreased the interactions between the different molecules and phases of the system, delaying the instability mechanisms of emulsions.
