dc.description.abstractLa realización de esta idea emprendedora de tortas saludables ha venido creciendo a nivel nacional y departamental, ya que las personas han tenido más conciencia a la hora de alimentarse y buscan la manera más saludable en el momento de consumir alimentos. La importancia de este proyecto es realizar la trascendencia de los estudios pertinentes y necesarios que pueden influir en la viabilidad del proyecto de tortas saludables en el municipio de Bucaramanga, por lo cual se llevará a cabo una investigación con enfoque mixto, tanto cuantitativo como cualitativo y de tipo experimental y descriptiva, utilizando un método inductivo en la recolección de información primaria acerca del segmento de mercado, sus características, necesidades, expectativas e información relevante para determinación de factores como precios y estrategias de mercado, además de realizar las evaluaciones particulares de temas financieros y operacionales requeridos. Para el desarrollo de los objetivos planteados, la encuesta es el instrumento de recolección de datos primarios para identificar los factores influyentes como las preferencias del mercado objetivo en cuanto a precios, preferencias y expectativas del negocio. Esta encuesta esta aplicada a un tamaño de muestra de 384 personas procedentes de Bucaramanga. Adicionalmente, se realiza el estudio técnico, administrativo y financiero que permita finalmente definir la rentabilidad del negocio y la conveniencia de la puesta en marcha del proyecto. Según los datos e información recolectada a través del desarrollo de todas las actividades propuestas, se determina que la viabilidad para una empresa productora de tortas saludables a base de granos enteros es positiva
dc.description.abstractenglishThe realization of this entrepreneurial idea of healthy cakes has been growing at the national and departmental level, as people have become more aware when it comes to eating and are looking for the healthiest way to consume food. The importance of this project is to carry out the transcendence of the pertinent and necessary studies that can influence the viability of the healthy cake project in the municipality of Bucaramanga, for which a research will be carried out with a mixed approach, both quantitative and qualitative and experimental and descriptive, using an inductive method in the collection of primary information about the market segment. its characteristics, needs, expectations and relevant information to determine factors such as pricing and market strategies, in addition to making the particular evaluations of financial and operational issues required. For the development of the proposed objectives, the survey is the primary data collection instrument to identify influencing factors such as the preferences of the target market in terms of prices, preferences and business expectations. This survey is applied to a sample size of 384 people from Bucaramanga. Additionally, the technical, administrative and financial study is carried out that finally allows to define the profitability of the business and the convenience of the implementation of the project.
