dc.description.abstractEl consumo de pollo en Colombia se ha incrementado con gran rapidez, posicionando el país como el tercer mayor consumidor de este producto en Latinoamérica. Distraves S.A.S, es una empresa con énfasis en la producción y distribución de proteínas y derivados de pollo. Cuenta con 87 puntos de venta propios y un gran número de distribuidores en los diferentes canales. La compañía ha venido realizando transformaciones significativas para aumentar la capacidad de producción de producto fresco refrigerado (-5°C), este aumento ha producido un problema de almacenamiento previo a la distribución creando la necesidad de alquilar contenedores o almacenamiento externo generando sobrecosto sobre el valor final. Basándose en las políticas del INVIMA, las cuales buscan que todos los productos avícolas comercializados se encuentren en excelentes condiciones de enfriamiento e higiene, control de patógenos y cualquier factor externo que pueda atentar contra la calidad y salud de los consumidores. Al momento de dar este paso en la transformación del refrigeramiento en los productos, este juega un papel fundamental al facilitar inspectores permanentes en todos los mataderos de Colombia, enfriamiento de la carne lo más pronto posible después del sacrificio y el mantenimiento ininterrumpido de la cadena de frío hasta el consumidor reduciendo la presencia de patógenos y contaminantes y mejorando la suavidad y textura del producto. Los sistemas de refrigeración se basan en principios termodinámicos y están diseñados para promover el intercambio de calor entre el proceso y el refrigerante y para facilitar la liberación del calor irrecuperable al medio ambiente. Es por ello que este trabajo mostrará los parámetros y la logística para implementar un excelente sistema de refrigeración, para la ampliación del área de almacenamiento de los productos refrigerados, en la planta diamante de Distraves S.A.S, mostrando los equipos necesarios para alcanzar esta meta.
dc.description.abstractenglishThe consumption of chicken in Colombia has increased very quickly, positioning the country as the third largest consumer of this product in Latin America. Distraves S.A. S, is a company with emphasis in the production and distribution of proteins and chicken derivatives. It has 87 own sales points and a large number of distributors in different channels. The company has been carrying out significant transformations to increase the production capacity of fresh refrigerated product (-5 °c), this increase has produced a pre-distribution storage problem creating the need to rent Containers or storage externally generating over-cost over the final value. Based on the policies of the INVIMA, which seek that all the poultry products marketed are in excellent conditions of cooling and hygiene, control of pathogens and any external factor that can threaten the quality and health of Consumers. At the moment of taking this step in the transformation of the refrigeration in the products, this one plays a fundamental role in facilitating permanent inspectors in all the slaughterhouses of Colombia, Cooling the meat as soon as possible after slaughtering and uninterrupted maintenance of the cold chain to the consumer by reducing the presence of pathogens and contaminants and improving the smoothness and texture of the product. The refrigeration systems are based on thermodynamic principles and are designed to promote the exchange of heat between the process and the refrigerant and to facilitate the release of the unrecoverable heat to the environment. That is why this work will show the parameters and the logistics to implement an excellent refrigeration system, for the expansion of the storage area of the refrigerated products, in the diamante plant of Distraves S. A, Showing the necessary equipment to achieve this goal.
