dc.description.abstract	El presente documento ofrece el planteamiento y desarrollo de un estudio del trabajo, llevado a cabo en la Sección de Comedores y Cafetería de la división de Bienestar Universitario de la Universidad Industrial de Santander sede Bucaramanga. Inicialmente, se presentan las generalidades del proyecto y de Bienestar Universitario. Luego, se parte de un diagnostico de los procesos de la sección de comedores y cafetería (especialmente aquellos procesos que implican la elaboración de los alimentos), especificando claramente las operaciones que allí se llevan a cabo. Tomando en cuenta el diagnostico inicial, se realizaron una serie de propuestas de mejora y se determinaron los tiempos incurridos de los diferentes procesos. Posteriormente, y considerando los descubrimientos del diagnostico inicial, se hallaron los costos de los principales productos que allí se elaboran; se desarrolló un estudio de capacidad para los servicios más relevantes de la sección; se propuso una distribución de las instalaciones; se ejecutó una investigación exploratoria que permitió determinar la demanda de la cafetería y comedores de Bienestar Universitario; se crearon un conjunto de indicadores de gestión, y finalmente se concluyó con una herramienta informática que permitirá a la dirección de la Sección de Comedores y Cafetería ejercer una mejor medición, control y toma de decisiones. 1
dc.description.abstractenglish	This document is about the planning and development of a work study, were done at the dining room and cafeteria section of the student welfare of the Industrial University of Santander in Bucaramanga. Initially, it shows the general information about the project and the company. Then, begins with a diagnostic of the processes in the dining room and cafeteria section (especially those processes involving food processing), specifying the operations performed there. Taking the initial diagnosis, was made proposals for improvement and determined the incurred time of the different processes. Subsequently, and considering the findings of the initial diagnosis, were found the costs of the main products are brewed there; it set up a capacity study for more relevant services in the section; was proposed facility layout, was developed an exploratory investigation that allowed find out the demand for dining room and cafeteria of the student welfare; was created a set of performance indicators, and finally concluded with a computer tool that will allow the dining room and cafeteria section to perform a right measurement, control and decision making. 3
