dc.description.abstract | En el sector agroindustrial cervecero, la estandarización es necesaria debido a que gracias a esto no solo podemos garantizar la inocuidad del producto, sino que también aseguramos la replicabilidad de las características organolépticas, evitando no conformidades por las entidades fitosanitarias y promoviendo la fidelización de clientes. La cerveza es la segunda bebida fermentada más consumida en el mundo, (Morgado, 2014). La formulación para la creación de cerveza artesanal que se presenta a continuación emplea como materias primas insumos importados de alta calidad como la malta base, lúpulo y levadura, esta cerveza es carbonatada con azúcar y , seleccionando el mejor producidas con malta mostraron niveles aceptables en pH, color, grado alcohólico, gravedad específica, tiempo de retención de espuma categorizando dentro de los estilos Pale Ale.1 * | |
dc.description.abstractenglish | In the agro-industrial brewing sector, standardization is necessary because thanks to this we can not only guarantee the safety of the product, but also ensure the replicability of the organoleptic characteristics, avoiding non-conformities by phytosanitary entities and promoting customer loyalty. Beer is the second most consumed fermented drink in the world. The formulation for the creation of artisan beer that is presented below, uses imported raw materials of very good quality such as malt base, hops and yeast, are Carbonated with sugar and , selecting the best treatment for their physicochemical characterization and using a type of beer the "pale ale". Beers produced with 100% malt showed acceptable levels in pH, color, alcoholic strength, specific gravity, foam retention time, categorizing into Pale Ale styles.2 The standardization of craft beer mentioned below, will allow to obtain a product made with imported raw materials such as barley malt, hops, yeast, and another national product such as spring water, without chemicals or other additives to guarantee the quality of the beer type ale.
