dc.description.abstractObjetivo. Cuantificar la percepción de inseguridad alimentaria y de hambre en los hogares, y la prevalencia de inseguridad alimentaria en términos de déficit de energía, en personas adultas, residentes en el área urbana de Bucaramanga. Materiales y Métodos. Durante 2007, un grupo 360 hogares y 360 individuos seleccionados al azar, contestaron el formato de percepción de seguridad alimentaria y hambre, recordatorios de 24 horas y otros con variables sociodemográficas. Un análisis bivariado utilizando una aproximación semi paramétrica, algoritmos desarrollados por investigadores de la Universidad de IOWA y regresión binomial, permitió explicar la inseguridad alimentaria mediante la percepción de los hogares y la cuantificación de la dieta usual en los individuos, ajustando por las variables sociodemográficas. Resultados. El 19.4% de los hogares tiene inseguridad alimentaria, el 43% de los individuos presenta una prevalencia de déficit de calorías (inseguridad alimentaria) y el 17% de inseguridad alimentaria con hambre desde el consumo de energía (- 2 DS). Sólo tres variables se relacionan en los dos ámbitos; la escolaridad, el acceso a los alimentos y la disminución en la adquisición de alimentos por falta de dinero. Conclusiones. A través de este estudio se logró evidenciar que no existen criterios claros en los conceptos teóricos, la medición, seguimiento y monitoreo de las metodologías cualitativas y cuantitativas relacionadas con la inseguridad alimentaria y el hambre.

To quantify the perception of food insecurity and hunger in the homes, and the prevalence of food insecurity in terms of energy deficit, adult, resident people in the urban area of Bucaramanga. Materials and Methods. During 2007, a group 360 at random selected homes and 360 individuals, answered the format of perception of food security and hunger, reminders of 24 hours and others with sociodemográficas variables. A bivaried analysis using an approach semi parametric, algorithms developed by investigators of the University of IOWA and binomial regression, allowed to explain the food insecurity by means of the perception of the homes and the quantification of the usual diet in the individuals, fitting by the sociodemográficas variables. Results. The 19,4% of the homes have food insecurity, 43% of the individuals present a prevalence of deficit of calories (food insecurity) and represent 17% of food insecurity with hunger from the energy consumption (- 2 DS). Only three variables are related both in scopes; the schooling, the access to foods and the diminution in the acquisition of foods by lack of money. Conclusions. Through this study it was managed to demonstrate that clear criteria in the theoretical concepts do not exist, the measurement, pursuit and monitoreo of the qualitative and quantitative methodologies related to the food insecurity and the hunger.
