dc.description.abstractDe acuerdo con los requerimientos establecidos por el Ministerio del Medio Ambiente, Ministerio de Protección Social y el Instituto Nacional de Vigilancia de Medicamentos y Alimentos (INVIMA), sobre la calidad del producto y las condiciones locativas para el sacrificio de especies, fue necesario incluir la producción limpia, en las fases del proceso para disminuir el riesgo de intoxicación al consumidor. Este parámetro se estableció como indicador de calidad mundial en las carnes. En los años de operación de la Planta de Beneficio del municipio de Simacota-Santander, ha cumplido con los requerimientos mínimos de saneamiento básico exigidos por la ley, pero es necesario identificar impactos ambientales y sanitarios en los procesos que ejecuta, para solucionar y proponer indicaciones ambientales tendientes a controlar las alteraciones negativas sobre el área de influencia. Por tal razón, la metodología aplicada en este estudio se basó en revisar información secundaria de la legislación actual, y reconocer la planta por medio de visitas que permitieron identificar impactos ambientales y sanitarios. Con la identificación de impactos ambientales y sanitarios en los procesos ejecutados en la Planta de Beneficio Animal de Simacota, se desarrolló un esquema de seguimiento mediante indicadores que dieron como resultado el plan de seguimiento ambiental sujeto a la normatividad nacional vigente.
dc.description.abstractenglishIn accordance with the requirements established by the Ministry of the environment, Ministry of Social protection and the National Institute of monitoring of medicines and food (INVIMA), on the quality of the product and the local conditions for the slaughter of species, It was necessary to include the clean production (asepsis), in the phases of the process to reduce the risk of poisoning consumers. This parameter was established as an indicator of global quality meats. In the years of operation of the processing plant of the municipality of Simacota-Santander, has complied with the you basic sanitation minimum required by the law, but is necessary to Sensory environmental and health impacts in the process executes, to solve and propose a plan of environmental monitoring to control negative alterations on the area of influence. For this reason, the methodology applied in this study was based on review of secondary information in the current legislation, and recognize the plant through visits, which allowed to identify environmental and health impacts. The methods mentioned, gave as a result, an environmental diagnostic that identified environmental impacts and its effects on natural resources. Currently, in the Decree 1500 2007, good manufacturing practices are set to operate the plants of benefit, in accordance with its class, in this case, type IV. This standard seeks to control production line, with the premise the follow-up and non-contamination of the product from the obtaining of the animal to the end product that reaches the consumer. Also seeks to mitigate the environmental impacts generated in processes being carried out in an animal plant.
